High Wycombe baker Andy Le has again won national recognition with his gourmet apple pie crowned Australia’s best this year.

A HIGH Wycombe bakery has again been awarded gold by the Official Great Aussie Pie 2026 Competition for their gourmet apple pie.

Four Seasons Patisserie and Bakery baker Andy Le said this year marked a record number of gold entries from his list of pies.

His record is extensive with a humble first entry in 2011, through to his first win in 2013 for Australia’s best apple pie and his latest win this year with his apple pie’s quality again reaffirmed.

“We won a record 22 gold medals from 25 entries this year and our gourmet apple pie was crowned best this year,” Mr Le said.

“This is the seventh time my apple pie has won the best in Australia.”

Mr Le said he enjoyed formulating new recipes and it was the joy of discovery that keeps him dedicated.

“A lot of people ask me, ‘Why do you have so many pie recipes?’” he said.

“I tell them that every time I go to a restaurant, I eat their food and then I think in my head, ‘Oh, I can make a pie like this,’ and then I go home and try it.”

For Mr Le, feedback is king and his key to continued improvement.

“I first started learning from my father in 2007 at our family bakery in Byford,” he said.

“To tell you the truth, when my parents made their old pies it was very basic and I have had to learn from a lot of people.

“I take seriously the feedback I get from the customers and judges and if they say it’s too sweet or too salty, I fix it.”

Mr Le said he enjoyed his time baking in High Wycombe however business had been impacted by recent road closures.

“It used to be very busy here,” he said.

“We’re in an industrial area and now the road’s been blocked so they can make an airplane road, it’s become a bit quiet.

“It used to be very, very popular.

“Now, I’m looking at potentially also opening up a new bakery in Kewdale.”

Mr Le said he wanted his pies to go beyond cultural borders and that he kept an open mind about what belonged in a pie.

“I can hopefully bring all the recipes from all the countries to put in my pies,” he said.

“Now I make the Thai pie, Vietnamese pie, and the classic Aussie pie and more so hopefully all people can enjoy it.”

The Official Great Aussie Pie Competition was established in 1989 by founders John Ross and Craig Perry with the aim of raising the quality standards of pies throughout Australia.
