GUILDFORD’S Stirling Arms Hotel has opened a new chapter in its 174-year history, with the soft launch of Billie’s cafe and wine bar on Wednesday, October 14.
Co-owners Dave Elder and Jesse Casserly have transformed a former antique store into a cafe named in honour of former hotel owner and Swan Districts football legend Bill Walker.
The four-time Sandover medallist played 305 games for Swan Districts and won three consecutive premierships between 1961 and 1963.
Walker later served as club president from 1983 to 1995 and was named an Immortal in the club’s Hall of Fame in 2019.
The Stirling Arms was established in 1852 and has undergone numerous changes throughout its history, including additions during Walker’s ownership.
Mr Casserly said researching the hotel’s former custodians had helped shape the redevelopment.
“We wanted to kind of honour those previous custodians who’d done well,” he said.
The owners purchased the hotel in May 2024, attracted by its history and potential.
“We were looking for a pub that had a good bit of history and good bones, but plenty of potential.”
Their efforts to acknowledge the hotel’s past extend to its wine list, with six or seven house wines named after former owners.
The venue also showcases independent Swan Valley wineries, reflecting Guildford’s position as a gateway to the region.
Mr Casserly said the owners wanted the Stirling Arms to remain a welcoming community institution.
“Everyone likes to be from here,” he said.
“As soon as you become part of the local community, they love and adore you.”
