HHH Spirits Distillery – No longer under the radar following two Chamber awards

Have you ever driven up Walnut Road in the Bickley Valley? Probably not!

But if you did you’d find a driveway with a sign that says HHH Spirits – Distillery.

The shed and sea containers look rather industrial and belie the creative space that you find will inside.

Recently HHH received two awards at the Kalamunda Chamber of Commerce awards night for the Excellence in Innovation and Outstanding Local Product categories.

“I fly under the radar”, says Hilton, the founder and distiller, “so it is good to get some recognition for all that hard work”.

Hilton swapped a career in construction disputes for distilling.

“I worked on an arbitration case for four years and it drove me to drink,” he laughs.

What Hilton did not expect was that building his own copper column would become a business on its own, and now 102 copper stills have been made for distilleries all over Australia.

The HHH gins are making their mark too, with signature botanicals all grown on the property and one of them, Honey Myrtle, growing wild.

“I don’t complicate the process of making gin, I just let the botanicals do the talking”.

Next year HHH will release its first, and very limited, single malt whisky.
